Instructions:
1. Prepare the orange peels:

* Carefully cut the peel from each half, removing the pith (the white part).
* Cut the peels into thin strips or small pieces.
2. Blanch the peels:
* Bring a pot of water to a boil and add the orange peels.
* Boil for 3 minutes, then drain.
* Repeat the blanching process two more times. This will soften the peels and remove any bitterness.
3. Make the syrup:
* In a saucepan, combine the sugar, water, and salt (if using).
* Bring the mixture to a boil over medium heat, stirring until the sugar is dissolved.
* Continue cooking, without stirring, until the syrup reaches the soft ball stage (235°F or 113°C). You can test this by dropping a small amount of syrup into a bowl of cold water. It should form a soft ball that flattens when pressed between your fingers.
4. Candy the peels:
* Add the blanched orange peels to the hot syrup.
* Stir gently to coat the peels evenly.
* Cook the peels in the syrup for about 15-20 minutes, or until they are translucent and most of the syrup has been absorbed.
5. Dry the peels:
* Line a baking sheet with parchment paper.
* Remove the candied peels from the syrup and place them on the baking sheet in a single layer.
* Allow the peels to dry completely at room temperature, or place them in a low oven (about 170°F or 77°C) for a few hours.
6. Store and Enjoy:
* Once completely dry, the candied orange peels can be stored in an airtight container at room temperature for several weeks.
* Enjoy them as a snack, add them to your favorite baked goods, or use them as a decoration on cakes or desserts.
Tips:
* For a sweeter candied peel, you can add a bit more sugar to the syrup.
* If you don't have a candy thermometer, you can test the syrup by dropping a small amount into a bowl of cold water. It should form a soft ball that flattens when pressed between your fingers.
