Divinity Candy Recipe
This recipe makes a classic, melt-in-your-mouth divinity candy.
Ingredients:
* 2 cups granulated sugar
* 1/2 cup light corn syrup
* 1/2 cup water

* 3 egg whites, at room temperature

Instructions:
1. Prepare the candy: In a large saucepan, combine the sugar, corn syrup, water, and salt. Bring to a boil over medium heat, stirring occasionally.
2. Cook to soft ball stage: Continue to cook, without stirring, until the candy thermometer reaches 240°F (115°C). This is the soft ball stage.
3. Beat the egg whites: While the candy is cooking, beat the egg whites in a large bowl until stiff peaks form.
4. Combine the mixtures: Carefully pour the hot candy mixture into the beaten egg whites in a slow, steady stream. Beat on high speed for 5-7 minutes until the mixture is thick and glossy.
5. Add flavoring: Stir in the vanilla extract. If desired, fold in the nuts.
6. Pour and cool: Pour the candy into a greased 9x13 inch baking pan. Let cool completely.
7. Cut and enjoy: Once cool, cut the divinity into squares. Store in an airtight container at room temperature.
Tips:
* Be careful with the hot candy: The candy mixture will be extremely hot. Be careful when pouring it into the egg whites and when working with it.
* Don't overcook the candy: If the candy is overcooked, it will be too hard.
* Use a candy thermometer: A candy thermometer is essential for getting the correct consistency.
* Don't overbeat the egg whites: Overbeating the egg whites will make the candy tough.
* Let the candy cool completely: This will allow the candy to set properly.
