How to Store Chocolate Candy (6 Steps)
Chocolate candy has a finicky nature. If you do not properly keep your candy, it will melt, soften or bloom. Bloom occurs over time when the sugar crystallizes in the chocolate from improper storage, or when the cocoa butter separates from the solids and rises to the surface, according to The Nibble. Both types of blooming do not change the taste, but the grayish, dusty residue does give the chocolate an unappetizing appearance. Prevent this from happening by keeping your chocolate candy in the correct conditions for storage.
Things You'll Need
- Chocolate candy
- Aluminum foil
- Wine storage unit (optional)
- Thermometer
- Hydrometer
Instructions
-
Wrap opened chocolate candies in aluminum foil or leave in the original, unopened package.
-
Store the chocolate candies in a cool, dry spot. Ideally, keep your chocolate candy with your wine in a wine storage unit, if available. Use a basement or dark pantry if a wine storage unit is unavailable, but do not store chocolate in the refrigerator.
-
Use a thermometer to find a location with temperature between 63 and 68 degrees Fahrenheit, as recommended by Wilbur Chocolate.
-
Set a hydrometer in the storage location to verify the humidity remains below 50 percent.
-
Arrange the chocolate candy on a shelf in your storage area at least 4 inches off the floor and away from strong-smelling items such as onions or spices.
-
Keep solid dark chocolate candy for up to 18 months. Keep solid milk chocolate for up to one year. Store filled chocolates for up to two weeks, according to The Nibble.
