The Best Way to Melt Chocolate (5 Steps)

There are a variety of methods that can be used to melt chocolate. However, the double boiler technique is arguably the best method. This method gives you the most control over the chocolate while it is melting, and it allows you to carefully monitor and control the temperature of the water. It also enables you to easily melt more chocolate if you start to run out.

  • Chocolate
  • Cooking pot
  • Double boiler
  • Spoon

Instructions

  1. Fill a pot about 3/4-full of water and heat the water until it is boiling. Once it starts to boil, turn the heat off.

  2. Place the double boiler filled with chocolate onto the pot of hot water. If you do not have a double boiler, you can use a glass bowl that is slightly larger than the opening of the pot you boiled the water in. It is very important that water does not get in the chocolate, so you cannot use a bowl smaller than the pot the water is in.

  3. Stir the chocolate while it is melting. Milk chocolate will need stirred constantly to prevent the milk and cocoa from separating. Dark chocolate only needs stirred occasionally due to the decreased amount of milk in it.

  4. Remove the double boiler or bowl of chocolate once the chocolate is completely melted and smooth. Continue stirring the chocolate as you work with it.

  5. Use the chocolate immediately after melting it. Once the chocolate is removed from the hot water, it will start to cool. Once it is cool, the chocolate will start to harden again.
