What rack do you put angel food cake on?

You don't need a special rack for angel food cake. In fact, it's best to avoid putting it on a rack.

Here's why:

* Cooling: Angel food cake needs to cool upside down to prevent it from collapsing. The best way to do this is to invert the cake pan onto a bottle or upside-down bowl. This allows air to circulate around the cake and prevents condensation from forming on the bottom.

* Stability: Angel food cake is very delicate and can easily break if placed on a rack. The wire spacing of a rack can also cause the cake to stick and tear as it cools.

To properly cool your angel food cake:

1. Immediately after removing from the oven, invert the pan onto a bottle or bowl.

2. Let it cool completely, typically for at least 2 hours.

3. Once cooled, run a thin knife around the edges of the pan. This will loosen the cake.

4. Invert the cake onto a serving plate.

Additional tip: If you are worried about the cake sticking, lightly grease the bottom of the pan before baking.
