For the Glaze:
* 1 cup powdered sugar
* 2 tablespoons honey
* 2 tablespoons orange juice
* 1 teaspoon vanilla extract
Instructions:
Prepare the Cake:
1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Beat in the honey, eggs, orange juice, and vanilla extract until well combined.
4. In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
6. Pour the batter into the prepared pan and bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Prepare the Glaze:
1. In a small bowl, whisk together the powdered sugar, honey, orange juice, and vanilla extract until smooth.
2. Drizzle the glaze over the cooled cake, allowing it to set before slicing.
Tips:
* For a richer flavor, you can substitute the orange juice with a combination of orange juice and orange zest.
* To add a crunchy texture, you can sprinkle chopped walnuts or pecans on top of the cake before baking.
* This cake can be stored at room temperature for up to 3 days, or in the freezer for up to 2 months.
