Can you use evaporated skim milk instead of 1 percent in a cake recipe?
No, evaporated skim milk cannot be used instead of 1 percent milk in a cake recipe.
These are two vastly different ingredients. 1 percent milk is fresh, whole milk with 1 percent fat. Evaporated skim milk is milk that has had the water removed and the fat skimmed off. It is thicker and more concentrated than 1 percent milk.
Evaporated skim milk will alter the texture, taste, and consistency of the cake. The cake will be drier, denser, and less flavorful. Substituting evaporated skim milk for 1 percent milk in a cake recipe is not recommended.
