What is an ash cake?
Ash Cake, also called potato bread or fadge, is an Irish soda bread made with a leavening agent of burnt ash. The method relies on the leaching of potassium hydroxide when wood ashes are steeped in water. Baking powder (sodium hydrogen carbonate) is often added nowadays to ensure successful rising of the bread where there is possible irregularity of the potash extraction.
