Can you make a cake without baking powder?

Ingredients

- 1 1/2 cups all-purpose flour

- 3/4 cup granulated sugar

- 3/4 cup packed light brown sugar

- 1 1/2 teaspoons baking soda

- 1 teaspoon salt

- 1 cup buttermilk, at room temperature

- 1/2 cup vegetable oil

- 2 eggs, at room temperature

- 1 teaspoon vanilla extract

Instructions:

1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round baking pan.

2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, and salt.

3. In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.

4. Add the wet ingredients to the dry ingredients and whisk until just combined. Do not overmix.

5. Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

6. Let the cake cool completely in the pan before frosting and serving.

Note: This recipe uses baking soda as a leavening agent instead of baking powder. This yields a cake that is slightly denser than a traditional baked cake.
