How to Make a Jello Poke Cake
Jell-O poke cakes are delicious desserts combining the light, fluffy flavor of sponge cake with the sweet goodness of good, old-fashioned Jell-O. The trick to making your treat is to provide the cake with a way to fully absorb the Jell-O. Add fresh pieces of sliced fresh fruit -- bananas and strawberries, for example -- to boost the flavor. Jell-O poke cakes are easy to prepare and require about an hour of kitchen time, from start to finish.
Things You'll Need
- 9-inch by 13-inch cake pan
- Grease
- 2 cups flour
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1 1/2 cups white sugar
- 1/2 cup shortening
- 3 eggs
- 1 cup milk
- 1 tsp. vanilla extract
- 1 large, medium and small bowl
- Whisk
- 1 pkg. Jell-O
- Tea kettle
- 1 cup boiling water
- Fork
- 8 oz. Cool-Whip
- Spatula
- Knife
- Bananas
- Strawberries
- Oven mitts
Instructions

Preheat your oven to 350 degrees. Lubricate the pan with grease. Combine the flour, baking powder and salt in a small bowl. Place the bowl nearby for use in later steps.

Combine the sugar and shortening in a large bowl. Mix until the combination is thin and fluffy. Add one egg to the mixture and whisk. Continue in this manner for the remaining two eggs.

Mix in the flour, milk and vanilla. Empty the mixture into the pan. Place the pan into the oven for 42 minutes.

Remove the cake from the oven and turn off the stove at the end of 42 minutes. Stick the cake with a fork every 1/2-inch over the entire surface. Allow the cake 10 minutes to cool while you proceed to the next step.

Boil 1 cup water in a tea kettle. Mix the boiling water and one package of Jell-O powder into a medium size bowl.

Slowly pour the Jell-O mixture over the cake. Watch the Jell-O soak into the cake via the fork holes. Chill the cake in the refrigerator for 3 1/2 hours. Layer the top with Cool-Whip. Slice and layer fresh bananas and strawberries to top off the cake.
