How to Make Hard Icing (4 Steps)

There are several different types of icing available to buy or make; however, if you are looking to make a hard icing, your best bet is royal icing. Royal icing has a matte finish, is easy to spread and dries very hard. Use it to decorate cakes, cookies and many other desserts.

Things You'll Need

  • 3 eggs
  • Bowl
  • 1 tsp. vanilla extract
  • Whisk
  • 4 cups confectioner's sugar
  • Food coloring

Instructions

  1. Separate the egg whites from the yolks. To separate, crack the center of the egg on the side of your bowl. Hold the egg in one hand while removing half the shell. Pour the egg yolk back and forth between the shells, catching the egg white in the bowl.

  2. Add the vanilla to the bowl. Mix the ingredients together with a whisk until frothy.

  3. Pour the confectioner's sugar into the bowl. Mix with an electric mixer. Use a low speed until the mixture is smooth and shiny. Turn the speed up and continue to mix for another 7 minutes.

  4. Add food coloring. Continue to mix until the icing is the desired color. Use the icing immediately, or store it in an airtight container in the refrigerator for up to 3 days.
