Tips and Tricks for Cupcakes From Box Cake Mix
Cupcakes aren't just for kids anymore, with specialty bakeries, cookbooks, magazines and blogs devoted to the confections. But making cupcakes from scratch can be time-consuming, and the treats may be inconsistent from one batch to the next. Using a cake mix to make cupcakes can approximate the same taste of homemade or bakery pastries, especially if you jazz up the mix and get creative with the presentation.
Begin With the Basics

Any cake mix can be used to make cupcakes, and most have cupcake baking times right on the box. Although following the mix instructions will create tasty cupcakes, try mixing the batter on low for one minute and then high for one minute. This will prevent over-mixing the batter and destroying the air bubbles that create a thick and creamy texture. A typical box of cake mix will make roughly two dozen regular-size cupcakes. If you have too much batter to fit into one cupcake pan, refrigerate the rest and allow the pan to cool before baking the next batch. Use an ice cream scoop to pour batter into cupcake liners.
Substitutions Win the Game

Even if the mix calls for margarine or oil, use the equivalent measurement in softened, unsalted butter instead to improve flavor and texture. Substitute other liquids for the water, such as milk, buttermilk, sour cream, coconut milk or juice to yellow cake batter, or try using coffee in a chocolate cake batter or lemon-lime soda in a lemon cake batter. Consider adding a teaspoon of a flavored extract like coffee liqueur, orange or mint to the total liquids.
Additions Don't Subtract

One way to spice up a mix when making cupcakes is to add a small box of dry pudding to the batter. Use vanilla with yellow cupcake batter, chocolate pudding with chocolate batter, or try butterscotch or pistachio for an unexpected flavor. If you add pudding, make sure the liquids total at least 1/2 cup, and add an extra egg. Even if you skip the pudding, add an extra egg or two or a few tablespoons of mayonnaise to the cupcake batter to create richer cupcakes.
The Silver Lining

Most cake mixes don't specify any type of cupcake liner, and the traditional paper liners will do the trick. But consider other varieties available, too, like pressed paper or glassine, which are more delicate, or the more durable foil or silicone liners. If you want to use decorative liners with interesting designs, opt for greaseproof liners that won't fade during baking. Fill liners only half full or they will spill over as they rise and make a mess. Always cool cupcakes at least 30 minutes before frosting or covering.
The Finishing Touch

The easiest way to dress up box mix cupcakes is to add fillings and toppings. Some specialty cookware stores sell cupcake plungers that remove the center of a cupcake so you can fill it with fruit, pie filling, icing or ice cream. Whether you use homemade or store-bought frosting, swirl it on using a spatula or piping kit. Experiment with adding food coloring or flavorings to the icing, or you're in a hurry, simply dip the tops of cupcakes in powdered sugar or warmed frosting. To top it off, add sprinkles, candies, cinnamon, chocolate curls or candied fruit.
