What is food colouring cochineal made from?
Cochineal food coloring is made from dried, crushed bodies of female cochineal insects, a species of scale insect called *Dactylopius coccus*.
These insects feed on prickly pear cacti and produce a red pigment called carminic acid, which is what gives cochineal its vibrant red hue.
