When do spices really expire?
Spices do not technically _expire_, but rather lose their potency over time. The shelf life of spices varies; generally, _whole spices last four years from their purchase date, and ground spices last two years_. Some spices retain their flavour longer, like cloves that last indefinitely in whole form and bay leaves which retain flavour for three to four years. To maintain your spice cabinet at optimal freshness:
- Buy spices whole and grind them yourself just before use with a coffee grinder
- Store spices in airtight containers
- Keep in a cool, dry and preferably dark place away from direct sunlight, oven or stove
