What are Cridillas?

Cadillas or Criadillas are bull testicles, but more commonly, sheep or lamb testicles. They are a popular dish in some Latin American, Middle Eastern, and Mediterranean cuisines, and are considered to be a delicacy in many cultures.

Cadillas can be prepared in a variety of ways, but they are most often deep-fried or grilled, and are often served with other grilled meats or as part of a mixed platter of grilled meats and vegetables. They are often served with a simple squeeze of lemon juice or with a spicy sauce, such as aji verde or chimichurri.

Cadillas are a rich source of protein, iron, and zinc, and are also a good source of vitamin B12, phosphorus, and potassium.
