Botulism
Botulism is a rare but serious illness caused by a toxin produced by the bacterium Clostridium botulinum. This bacterium is found in soil, water and dust and can contaminate food if it is not properly preserved or stored.
Leaving a bottle of olive oil infused with garlic or herbs unrefrigerated can create the perfect environment for C. botulinum to grow and produce toxins. This toxin attacks the nervous system, leading to symptoms such as blurred vision, muscle weakness and paralysis. Botulism can be fatal if not treated promptly.
To prevent botulism:
- Always refrigerate infused oils
- Do not store infused oil for more than 2 weeks
- Discard any oil that is cloudy or has an off odor
- Do not use infused oil if you are pregnant, nursing or have a weakened immune system
- If you experience any symptoms of botulism, seek medical attention immediately
