When you stew tomatoes do take the skin off?

When stewing tomatoes, it's not necessary to remove the skin. In fact, leaving the skin on can add flavor and texture to the dish. The skin also helps to hold the tomatoes together and prevents them from becoming too mushy.

If you prefer, you can remove the tomato skins before stewing them. To do this, simply blanch the tomatoes in boiling water for about 30 seconds. Then, transfer them to a bowl of cold water and let them cool completely. Once the tomatoes are cool, you can easily peel off the skin.
