How to Keep Eggplants Fresh (4 Steps)
Eggplants are frequently used in Italian, Thai and Asian cuisines. In order to achieve the right flavor in your recipes, choosing fresh eggplant is crucial. When an egglant is picked, it immediately begins to deteriorate, and freshness is compromised. Here are some tips to keep your eggplant fresh.

Select an eggplant that is fresh to start with. You can not revive an eggplant that has already started to deteriorate.

Do not leave the eggplant in your car for too long in the heat, as heat is detrimental to eggplants. Make sure sunlight is not directly hitting your eggplant, as well.

Place the eggplant in the vegetable drawer of your fridge. Cold temperature will stall the ripening process.

Purchase "green" bags at the market or online (see Resources below). These bags prevent fruit and vegetables from ripening too quickly.
