How to Freeze Zucchini or Yellow Squash (5 Steps)
Frozen zucchini slices keep well for as long as a year if frozen and stored properly. Zucchini and yellow squash can be frozen in the same manner. Frozen zucchini slices stored in single-serving containers are convenient for quick recipes. Zucchini and yellow squash can be used in recipes such as casseroles, breads, grilled vegetable packets, cakes, soups and salads. If you prefer to store grated zucchini in the freezer, all you need to do is grate it and place it in a freezer bag.

Instructions

Fill a pot with water and allow it to boil. As you wait for the water to boil, wash the zucchini with water.

Cut the zucchini into ½-inch slices.

Drop the zucchini into the boiling water, allowing it to boil for three minutes.

Fill a bowl with cold water while you allow the zucchini to boil. Transfer the boiled zucchini to the bowl of cold water to cool.

Drain the zucchini in a colander, and place the zucchini slices into freezer-safe bags. Place one serving per bag, or about one zucchini per bag.
