How to Use Anchovy Paste
Although the slimy, hairy texture of anchovies may be unappealing to some, their taste is a fine addition to any culinary preparation. Anchovy paste can be found at most grocery stores in the canned fish aisle, and it is a great addition to dressings, meat rubs, and pasta sauces.
Things You'll Need
- Anchovy Paste
- Mixing bowl
- Whisk
- For Caesar Salad:
- 1/2 to 3/4 cup croutons
- 1/2 cup mayonnaise
- 1 to 2 teaspoons finely chopped garlic
- 2 inches of anchovy paste
- Pinch of salt
- 2 tablespoons freshly squeezed lemon juice
- 3 drops Worcestershire sauce
- 6 tablespoons extra-virgin olive oil
- 4 tablespoons freshly grated Parmesan cheese
- 1 head Romaine lettuce
- Ground black pepper

- For Meat Rub:
- 1 garlic clove; crushed
- 1 teaspoon anchovy paste
- 2 teaspoons olive oil
- 1/4 teaspoon ground black pepper
- Knife
- Cutting board

- For Pasta Sauce:
- 3 tablespoons olive oil
- 1/2 pound mushrooms, cut into 1/4-inch slices
- 1 tablespoon finely chopped garlic
- 1/4 teaspoon red hot pepper flakes
- 1/2 small zucchini, trimmed and cut into 1/4-inch cubes
- 1 pound ripe plum tomatoes, cut into 1/2-inch cubes
- 1/2 cup drained capers
- 2 tablespoons anchovy paste
- 3/4 pound macaroni bows or farfalle
- 4 tablespoons chopped Italian parsley
- Freshly ground pepper to taste
- 4 tablespoons grated Parmesan cheese.

How to Use Anchovy Paste to Make a Caesar Salad

Blend garlic, anchovy paste, and salt with a whisk.

Add lemon juice and worcestershire sauce. Continue whisking.

Add mayonnaise and whisk for about a minute until thick.

Add olive oil slowly, while continuing to whisk the mixture vigorously.

Add two tablespoons of parmesan cheese.

Toss 1/3 cup of dressing with croutons, as well as washed, dried, and cut Romaine leaves. Sprinkle with remaining parmesan.
How to Use Anchovy Paste in a Meat Rub

Crush a clove of unpeeled garlic. Put it on a cutting board and place a wide knife over the clove, with the blade flat. This will remove the skin. Then, chop the garlic, push it all into a little pile, and crush it with the flat blade once again. Repeat until garlic is completely crushed, and be sure to retain its juices for maximum flavor.

Mix crushed garlic with one teaspoon of anchovy paste.

Whisk in olive oil, salt and pepper.

Rub onto your favorite beef, poultry, fish, lamb, or pork and cook as desired.
How to Use Anchovy Paste in a Delicious Pasta Sauce

Saute mushrooms in olive oil until light brown.

Add garlic and pepper flakes. Saute, but do not brown.

Add zucchini and stir for one minute.

Add tomatoes, capers and anchovy paste. Stir for two minutes over low heat.

Stir sauce into pasta, then add 1/2 cup of water. Season with parsley, salt, pepper and parmesan cheese. Toss, blend and serve.
