Substitutes for Coconut Oil
Coconut oil can be found in fruit drinks, poultry marinades and baked goods. Some people may prefer not to use coconut oil in their cooking because they are allergic, prefer local products or simply do not like the taste. Fortunately, substitutions exist if you eschew coconut oil.
Canola Oil

Canola oil can be used in place of a coconut oil, according to the food website, Saveur. Canola oil can do anything that coconut oil will do, and is less expensive as well.
Corn Oil

Like canola oil, corn oil can serve in the same capacity as coconut oil as long as the corn oil is high quality. Avoid hydrogenated corn oil, and any oil that has additives in it.
Other Uses

Use a teflon pan or a nonstick spray product rather than using any cooking oil, including coconut oil, to prevent a pan from sticking. For uses other than cooking, such as for tanning oils or lubrication, use linseed oil or tung oil in place of coconut oil.
