How to Store Fresh Jerusalem Artichoke (3 Steps)
Jerusalem artichokes are tubers that are related to sunflowers rather than to artichokes, as the name implies. Their flavor resembles that of water chestnuts, while their knobby appearance is reminiscent of ginger. Jerusalem artichokes, also called sunchokes, work well in soups, salads and main courses alike. Despite their tough and hardy appearance, they are surprisingly perishable. Even with proper care, you can only keep Jerusalem artichokes fresh for a few weeks.

Sort through your Jerusalem artichokes and remove any that show signs of spoilage, such as mold or bruises. Discard these or cut off the damaged areas, and use those that can be salvaged immediately.

Wrap the Jerusalem artichokes tightly but gently in plastic wrap. Do not squeeze them together so hard that they might bruise, as bruised sunchokes can spoil more quickly. Use enough plastic wrap to fully cover the Jerusalem artichokes and prevent their exposure to air.

Place the wrapped Jerusalem artichokes in the produce compartment of your refrigerator. You can keep them fresh there for up to two weeks.
