How to Dehydrate a Pumpkin
Dehydrating allows you to preserve fruits and vegetables without the need for cold storage. Dehydrated vegetables have a very low moisture content, which prevents spoilage while retaining flavor and nutrients. Pumpkin dries well and will rehydrate again once simmered in water. Use the dehydrated pumpkin as you would fresh after you have rehydrated it. You don't need a special appliance or tools to successfully dehydrate pumpkins at home.

Instructions

Cut the pumpkin in half lengthwise. Scoop the seeds and pulp from each half with a spoon. Slice the remaining pumpkin into 1 to 2-inch cubes.

Bring 1 gallon of water to a full boil in a large pot. Place a bowl of ice water near the pot.

Submerge the pumpkin cubes, 1 lb. at a time, in the boiling water. Boil the cubes for 1 minute.

Remove the cubes from the boiling water with a slotted spoon. Place them in the ice water for 1 minute to cool. Repeat the process for any remaining pumpkin cubes.

Slice the skin off the boiled cubes and discard. Cut the cubes into 1/4-inch thick slices.

Spread the pumpkin slices out in a single later on a baking trays. Place the trays in an oven preheated at the lowest setting of 140 to 150 degrees Fahrenheit.

Crack the oven door open during the drying process. This allows excess moisture to escape and helps maintain a temperature of 140 degrees Fahrenheit inside the oven.

Dry the pumpkin slices in the oven for 10 to 16 hours, or until the pumpkin is dry and brittle. Monitor the pumpkin during drying so the edges don't scorch.
