How to Keep Cucumber Juice Fresh

Things You'll Need
- Several cucumbers
- Vegetable peeler or paring knife
- Food processor or blender
- Metal sieve
- Spoon
- Storage container
Instructions

Peel the cucumbers with a vegetable peeler or paring knife. Trim off the ends and dispose of them. Cut the cucumbers into thin slices. Place into a food processor or blender for one to two minutes, or until the cucumbers have become pulp.

Set a metal sieve over a bowl. Pour the juice through the sieve, separating the juice from any cucumber pulp.

Stir the remaining pulp in the sieve with a spoon until no more juice drips through the sieve. Avoid pressing on the pulp; it may make the juice cloudy.

Pour the pulp-free cucumber juice into a food storage container. Place the lid on top and seal it.

Store the cucumber juice in the refrigerator for up to one week. Store the pulp in a separate container for the same length of time, if desired.
