How to Make String Bean Roll Ups (6 Steps)

String bean roll ups make an easy, savory dish that you can serve with a meal or as a passed appetizer as a party. The green beans are rolled up inside a meat of your choice, such as bacon, prosciutto or even thinly cut steak strips. The green beans should be at least partially cooked before making the roll ups. Blanch fresh or frozen beans for about 3 minutes in boiling water. To save on prep time on the serving day, roll up the string beans the day before and pop them in the oven just before serving.

Instructions

  1. Gather several string beans into bundles roughly 1 inch in diameter. This works best with long string beans, so avoid the short-cut, canned varieties.

  2. Cut your choice of meat into 4- to 6-inch long strips that are 1 to 2 inches wide. Depending on the flavor you wish to achieve, you can wrap the green beans in bacon, steak, prosciutto, ham or even turkey slices.

  3. Lay one bundle of green beans at one end of a strip of meat with the meat slightly off center of the beans. Roll up the bundle in the meat strip. After wrapping the bundle once, overlap the meat slightly, moving closer to the center of the green bean bundle and continue rolling. Repeat this after each complete wrap. You should be able to roll a 1-inch bundle of beans about three times with a 6-inch strip of meat.

  4. Lay the bundles on a foil-lined baking sheet with the seam side facing down. Bake in an oven preheated to 400 degrees Fahrenheit for 15 to 20 minutes or until the bacon or other meat is crisp.

  5. Mix your choice of ingredients for a complementary sauce and simmer it on the stovetop while the string bean roll ups cook. Ingredients you might use in a sauce include Worcestershire sauce, soy sauce, rice vinegar, brown sugar, sauteed onions and garlic, orange juice and butter.

  6. Drizzle the sauce over the string bean roll ups. Bake for an additional 5 minutes while the sauce thickens to a glaze.
