What Are Slotted Spoons Used For?
A large spoon with slots in the bowl is a useful tool for draining food cooked in liquid. The slotted spoon works particularly well for large items and to drain things quickly.

Use a slotted spoon with larger foods that could fall apart or become damaged when removed from hot liquids, such as poached eggs or handmade ravioli. They are also good for removing fried foods from oil and draining vegetables or meat cooked in broth or water. Gently scoop food out of the liquid with the spoon and hold it over the cooking vessel for a few seconds, allowing the liquid to drain away.

Slotted spoons are manufactured in many materials, such as stainless steel, bamboo and silicon. While they all work to lift and drain food, testers for "Cook’s Illustrated" magazine found the easiest to use have long handles and bowls deep enough to prevent food from falling out. The larger the slots, the faster items drain. Using a non-metal spoon with an enameled pot prevents scratches on the surface that metal spoons can create. A handle that is angled so your hand is not directly over steaming hot liquid is a good safety feature.
