How to Cook With Truffles
Truffles have been prized for their intense and unforgettable taste and aroma for thousands of years, so much that they are thought to hold magical powers. Because truffles grow underground, they are elusive and very expensive. If you're lucky enough to have truffles, use them simply and sparingly with mild foods that won't overpower the intense flavor of the truffles.

Stir a tiny bit of truffle oil into freshly boiled pasta to create pasta con tartufi. Only 1/8 tsp. of truffle oil will turn the pasta into a delicious gourmet entrée. If you have fresh truffles, chop them finely and add about ½ oz. to the top of each serving.

Combine truffles with eggs for scrambled eggs or omelets. The truffles should be added at the very last minute of cooking so that the truffles are raw or only lightly heated, which is enough to incorporate the flavor and aroma into the eggs.

Make truffle salad dressing by mixing truffle oil and balsamic vinegar. The blend is according to your taste preferences, but two parts truffle oil to one part vinegar is a good beginning. You can also add a small amount of hazelnut oil to make the truffle oil go further. If you want a thicker dressing, add a bit of cream.

Start out with a regular recipe for polenta, and turn it into truffled polenta. Simply drizzle the polenta with truffle oil and a few shavings, along with a little asiago or fontina cheese.

Create gourmet truffle mashed potatoes by preparing fluffy mashed potatoes with butter, cream, salt and pepper and sprinkling some truffle shavings over the top. If you have truffle oil, it will be delicious drizzled over mashed or boiled potatoes.

Turn standard risotto into a gourmet dish by adding truffles. You can either drizzle the risotto with some truffle oil and with some sprinkled truffle shavings, or add fine slivers of truffles to the risotto. Truffles steamed with wine and stirred into the risotto at the last minute is also a delicious way to use truffles in risotto.
