How to Crush Fresh Corn
Sweet, delicious corn on the cob is a summer treat roasted, grilled, boiled or even microwaved. But you're not limited to just enjoying the hot corn straight off the cob with butter and salt. Crushed fresh corn kernels are the basis of creamed corn and also used in corn pudding, corn muffins and hearty soups. Preserve the sweetness by selecting the freshest possible corn and promptly using it. Plan on using two medium ears of fresh corn to obtain 1 cup of fresh corn kernels.

Prepare the corn by removing the husks and silks from fresh corn on the cob. Cook the corn in boiling water in a large pot for three to six minutes. Do not add salt to the water because it can cause the corn to get tough. Remove the cooked corn from the pot, rinse it in cold water and allow it to cool for a few minutes so you can comfortably handle it.

Use a sharp knife to cut the kernels off the cob. Be careful not to cut all the way down to the cob. Cut the kernels off down the length of the cob. With the edge of a spoon, gently break up long strips of corn or cut them up with a sharp knife.

Crush the corn manually by chopping it up several times with a sharp knife until no whole kernels remain. For a more finely crushed version, pulse the corn kernels in a food processor until it is crushed or pureed. Use the crushed corn to make creamed corn, corn pudding or corn-based baked goods or soups. If you are using the crushed corn in baked goods, process the corn with a little milk, cream cheese or other smooth cream item to produce an easily blendable corn for your recipe. Or create a savory pesto by processing the corn, some pieces of cooked bacon and your favorite seasonings with a little olive oil.
