How to Season Pork Meat for Enchiladas

Whoever said that you can't have too much of a good thing probably wasn’t a cook. Otherwise, this sage would know that you can indeed use too much of a good ingredient, including sage. So if you’re seasoning pork meat for enchiladas, it’s better to take an easy-does-it approach, creating a cooler blend and then steadily adding hotter ingredients, whether you season the meat before it's cooked or afterward.

Season Raw Pork

  1. Bring out the natural flavors of pork with a basic seasoning blend of salt and pepper. Add a few dashes of thyme and oregano to enrich the blend.

  2. Amplify these basic but flavorful combinations by adding some chili powder and garlic powder. Add a splash of lime or orange juice, if you wish.

  3. Dust the pork with some ground cumin, using a light touch.

Season Cooked Pork

  1. Build your pork meat seasoning around diced onions and peppers. Add some of your favorite salsa or hot sauce, if you like.

  2. Add heat to your pork meat with chopped chili peppers. Try a medium variety, such as a Pasilla or Cascabel, a medium-hot variety, such as Serrano or a Bishop's Crown, or a hot variety, such as a Bahamian or a Carolina cayenne pepper. Augment the flavor with a few dashes of garlic salt and some diced green onion.

  3. Fire up the flash point with chipotle seasoning. You can buy this complex blend in the store, ready-made, or come close to simulating it by raiding your spice rack and using basil, cayenne pepper, coriander, cumin, garlic powder, ground mustard, marjoram, onion powder, oregano, rosemary and thyme. No chipotle blend would be complete without chipotle peppers, which are smoked jalapeno peppers.
