Adding Yogurt to Thicken a Sauce (3 Steps)

The addition of yogurt to thicken a sauce or gravy is common in Indian curries. Yogurt enhances the flavor while adding additional moisture and creating creamy texture. Because yogurt contains lactic acid and is high in protein, high heat can cause separation and curdling. When adding yogurt to a warm or hot sauce, you'll need to take some steps in order to prevent this from happening.

Things You'll Need

  • Whole-milk yogurt
  • Measuring cups or spoons
  • Mixing bowl
  • Cornstarch or flour
  • Whisk

Instructions

  1. Measure out the amount of yogurt that your recipe calls for and place into a mixing bowl. Allow the yogurt to come to room temperature. This warming will help minimize the temperature shock when adding the yogurt to your sauce.

  2. Add 1 teaspoon of cornstarch or 1 1/2 teaspoons of flour to every 1 cup of yogurt. Whisk until well combined.

  3. Pour a small amount of the warm sauce into the yogurt and gently mix. Continue to slowly add additional sauce, allowing the yogurt to gradually reach the temperature of the sauce. Once it reaches temperature, gently fold the yogurt mixture into the sauce. Once the yogurt is well blended, continue to cook until the sauce reaches the desired thickness.
