If you are roasting a large quantity of ducklings and must use both your conventional ovens at the same temperature but find in convection oven done first. Why did this happen?
The convection oven has a fan that circulates the hot air, which cooks the food more evenly and quickly. The conventional oven does not have a fan, so the hot air rises to the top of the oven, and the food at the bottom cooks more slowly. This is why the ducklings cooked first in the convection oven.
