How to Barbecue Chestnuts

'Chestnuts roasting on an open fire' is more than just lyrics to a holiday song -- you actually can roast these meaty nuts over the direct heat of a barbecue grill. Chestnuts have a firm flesh that softens to a sponge-like texture with an earthy, starchy flavor when cooked. You only need to cut through the hard skins slightly before setting them on the grill. Serve them plain, tossed with oil and spices, or sweetened with honey.

  • Paring knife
  • Charcoal
  • Tongs

Instructions

  1. Prepare your grill for medium-high, direct heat. Clean the grill grate and If you are using a charcoal grill, add fresh coals and wait until they ashen before adding the chestnuts.

  2. Score an "X" into the skin of each chestnut, on either the rounded or flat side using a sharp paring knife. This allows steam to release so the chestnuts won't explode as they get hot.

  3. Place the scored chestnuts on your grill grate, directly over the heat. Cover and cook until the skin starts to peel back to reveal the flesh, about 15 to 20 minutes.

  4. Remove them from the hot grill using tongs and let them cool slightly on a baking sheet. Peel the skin while they are still warm and enjoy.
