* 6 large eggs
* 1/2 cup grated Pecorino Romano cheese
* 1/4 cup finely grated Parmesan cheese

* 2 cloves garlic, minced
* 1/4 cup olive oil
* Salt and black pepper, to taste

Instructions:

4. Add garlic: Add the minced garlic to the skillet and cook for another 30 seconds, until fragrant.
5. Combine with pasta: Drain the spaghetti, reserving about 1 cup of the pasta water. Add the spaghetti to the skillet with the pancetta and garlic. Toss to combine.
6. Make the sauce: Remove the skillet from the heat. Gradually add the egg mixture to the pasta, whisking constantly. If the sauce seems too thick, add a little of the reserved pasta water, a tablespoon at a time, to thin it out.
7. Serve: Serve the carbonara immediately, garnished with additional grated cheese and black pepper.
