How to Make Pineapple Garnish Wedges for Drinks

A pineapple wedge is the perfect garnish to almost any type of fruity cocktail or tropical drink. The spiny rind of the pineapple is typically kept on, making the wedges look more attractive. To make the wedges from a whole pineapple, you'll need to break the fruit down into sections first. A sharp chef's knife will make easy work of the pineapple, cutting through the rind and juicy flesh with ease.

Things You'll Need

  • Cutting board
  • Sharp chef's knife

Instructions

  1. Lay a pineapple on its side on a clean cutting board. Cut off the stem end, as well as the bottom to make it completely flat, using a sharp chef's knife.

  2. Stand the pineapple upright, then slice in half lengthwise, down the center. Lay each half on the cutting board, cut-side down.

  3. Cut each pineapple half in half again, lengthwise, so that you have four pieces of pineapple. Cut each of these pieces once again, lengthwise. You should now have eight elongated sections of pineapple.

  4. Position the knife above the pale yellow core that should be running down the interior edge of each pineapple section. Slice down the length of the pineapple section, just above the core, to remove it. Repeat with the other sections.

  5. Slice each pineapple section crosswise into wedges roughly 1/4 to 1/2 inch thick. Make a 1/2-inch-deep slit into the center of each wedge. You can now slide the pineapple wedges onto the rim of any glass as a garnish.
