How to Make Penne Vodka With No Heavy Cream (4 Steps)

Simple, but a cut above standard red sauce, penne alla vodka is a pasta dish that can impress company with its rich, but delicate flavor. The stars of the dish are penne pasta, onions, tomatoes, vodka, Parmesan cheese, and, usually, heavy cream. However, heavy cream is not readily available; in that case, a substitution needs to be made.

  • Vodka
  • Plain yogurt
  • Parmesan cheese

Instructions

  1. Heat a large skillet on medium heat on the stove. Add some butter or olive oil to the pan

  2. Dice onion and garlic as needed and add to the skillet. Saute for a few minutes, and then add seasonings, tomatoes, and vodka. Cook for a few minutes, then add the same amount of plain yogurt that you would have of heavy cream as well as Parmesan cheese. Add a small amount of butter to the sauce and stir well.

  3. Heat a stockpot filled two-thirds of the way with water. Add a small amount of salt and bring to a rapid boil on high heat. Add the pasta and cook for 10 to 12 minutes until the pasta is al dente.

  4. Drain the pasta in a colander and add back to the stockpot. Pour the sauce onto the pasta and mix well. Top with a small amount of Parmesan cheese and serve.
