How to Cook Zucchini Like a Japanese Hibachi Restaurant
If you’re jones-ing for grilled zucchini after a visit to a Japanese steakhouse, you’ve picked a winner. “Yaki zukkini” as the translation would render it, provides a mouthwatering and healthy way to add zest to this mid-summer vegetable. Since technically a hibachi refers to a charcoal barbecue grill, the Japanese preparation you actually want is a home version of the steakhouse’s centerpiece -- the giant, flat teppan, which is used to prepare teppanyaki.

- Soy sauce
- Mirin
- Sugar
- Fresh ginger

Prepare a dipping sauce by combining soy sauce and mirin sauce in a 2:1 ratio. Add a small amount of sugar and finely grated fresh ginger. Stir to dissolve the sugar.

Preheat a griddle or large fry pan on medium-low heat.

Trim the zucchini to preference. Copy the traditional Japanese style of cutting it into rounds or in long ovals cut on an angle. Or trim the zucchini ends and cut it the long way into flat slices ¼-inch thick. If you are also cooking meats in bite-sized pieces, you can cut the zucchini to match. Alternatively, quarter the zucchini and then crosscut twice into French fry-sized pieces.

Turn on your range hood if you have one. Turn up the heat under your griddle to Hot. Brush or spray vegetable oil on the griddle or fry pan. Add the zucchini slices and cook until they are just browned. Turn rounds, ovals or slices with tongs halfway through, and toss French fry shapes with a wooden spatula until done. Avoid overcooking, as they will become limp. Remove the zucchini to a platter lined with paper towels and serve.
