How do you cook a two pound bottom round roast so it is not tough?
Ingredients
- 2 pound bottom round roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
1. Preheat the oven to 325 degrees F.
2. In a large skillet over medium heat, heat the olive oil.
3. Season the roast with salt and pepper, then brown on all sides in the hot oil, approximately 5 minutes.
4. Place roast in the preheated oven on a cast iron pan or skillet or another metal pan.
5. Bake for 1 1/2 to 2 hours, or until the roast is cooked to the desired doneness.
6. Remove from oven and allow roast to rest for 10 minutes before slicing and serving.
Tips:
* Use a meat thermometer to ensure that the roast is cooked to the desired doneness.
* Don't overcook the roast, or it will become tough.
* Let the roast rest before slicing and serving so that the juices can redistribute.
