How do you cook a pot of curry for 200 people?
Ingredients:
* 14 pounds of boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
* 3 tablespoons of ground cumin
* 3 tablespoons of ground coriander
* 1 tablespoon of turmeric powder
* 1 tablespoon of paprika
* 1/2 teaspoon of red chili powder
* 1/4 teaspoon of garam masala
* 1/4 teaspoon of salt
* 1/4 teaspoon of black pepper
* 1/2 cup of vegetable oil
* 12 large onions, diced
* 4 red bell peppers, diced
* 4 green bell peppers, diced
* 4 tomatoes, diced
* 1 tablespoon of minced garlic
* 1 tablespoon of minced ginger
* 10 cups of chicken broth
* 2 cups of plain yogurt
* 1 package of cooked quinoa, lentils, rice, or other grains (optional)
Instructions:
1. In a large bowl, combine the chicken, cumin, coriander, turmeric, paprika, chili powder, garam masala, salt, and black pepper. Mix well to coat the chicken.
2. Heat the oil in a large pot or Dutch oven over medium heat. Once the oil is hot, add the chicken and cook until browned on all sides.
3. Add the onions and cook until softened, about 5 minutes.
4. Add the red bell peppers and green bell peppers and cook until softened, about 5 minutes more.
5. Add the tomatoes, garlic, and ginger and cook for 1 minute more.
6. Add the chicken broth and bring to a boil. Reduce heat to low and simmer for 1 hour, or until the chicken is cooked through.
7. Stir in the yogurt and quinoa, lentils, rice, or other grains (if desired) and heat through.
8. Serve the curry with rice, naan bread, or other desired sides.
