How do you refine butter?
Here is one method for refining butter:
1. Gather the ingredients and equipment.
You will need unsalted butter, a heavy-bottomed saucepan, cheesecloth, a fine mesh sieve, a wooden spoon, and a storage container.
2. Melt the butter.
Place the unsalted butter in a heavy-bottomed saucepan and melt it over low heat. Stir the butter constantly to prevent it from scorching.
3. Skim the milk solids.
As the butter melts, milk solids will rise to the surface. Skim these solids off with a wooden spoon and discard them.
4. Let the butter settle.
Allow the melted butter to settle for 5-10 minutes. This will allow any remaining milk solids to sink to the bottom of the saucepan.
5. Pour off the clarified butter.
Carefully pour the clarified butter into a storage container, leaving behind any remaining milk solids.
6. Cool and store the butter.
Allow the clarified butter to cool completely before storing it in a cool, dark place.
