How To Fix a Box of Cake Mix Without An Egg

Whether you are looking to create a vegan cake alternative or just realized you were out of eggs after opening the cake-mix box, your refrigerator or pantry may already have the perfect egg substitute. When baking a cake, the eggs act as a leavening agent, as well as providing moisture and helping to bind ingredients. With this in mind, one of these different suggestions can help you fix a box of cake mix without an egg.

Things You'll Need

  • Ground flaxseed
  • Hot water
  • Baking powder
  • Whisk
  • Mixing bowl
  • Measuring spoons and cups
  • Pureed fruit, such as bananas or apples
  • Buttermilk
  • Vinegar
  • 12-ounce can of soda

Instructions

  1. Mix together 1 tablespoon of ground flaxseed, 1/4 teaspoon of baking powder and 3 tablespoons of hot water with a whisk. Set aside until the mixture becomes thick. Use this amount as a substitute for one egg. Mix additional amounts for each egg required.

  2. Measure out 3 tablespoons of pureed fruits, such as bananas or applesauce. Add this amount for each egg required in your box-cake recipe.

  3. Measure out 1/2 cup buttermilk for every egg your box-cake recipe calls for. Add the buttermilk the same way you would the eggs.

  4. Mix together 1 tablespoon of white vinegar, 1 tablespoon of water and 1 teaspoon of baking powder. Use this substitution for each egg in recipes where more than one egg is required.

  5. Open a can of your favorite soda pop. For most box-cake mixes, one full can of soda replaces both the required eggs and oil.
