In baking terms what is meant by center set?
Center set refers to the condition of a cake or other baked good when the center has risen to the same level as the edges of the pan. This is desired as it indicates the baked good has been baked evenly and is done. An opposite of center set is a collapsed center, which indicates the baked good was likely not done fully or was not cooled properly in the pan before being removed.
