Victoria Scones
Ingredients:

- 1/2 cup (1 stick) unsalted butter, cold and cut into small pieces
- 1 large egg

Instructions:
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. Use your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
4. In a small bowl, whisk together the egg, milk, and vanilla extract.
5. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
6. Fold in the chopped dried fruit.
7. Turn the dough out onto a lightly floured surface and knead gently a few times until it just comes together.
8. Pat the dough out into a 1-inch thick circle.
9. Use a 2-inch biscuit cutter to cut out the scones.
10. Place the scones on a parchment paper-lined baking sheet.
11. Bake for 10-12 minutes, or until the scones are golden brown and cooked through.
12. Let the scones cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Tips:
- If you don't have any dried fruit on hand, you can omit it.
- You can also use a pastry blender or food processor to mix the butter into the flour mixture.
- Be sure to not overmix the dough, as this will make the scones tough.
- Bake the scones until they are golden brown and cooked through. If the scones are underbaked, they will be doughy in the center.
- Let the scones cool completely before serving.
