Alternatives to Baking Paper
Try one of the many alternatives to paper baking sheets. Paper baking sheets are thrown away after each use, resulting in more waste and the extra cost of buying replacements. Some baking products such as sticky rolls and pies can also bleed through the paper, adding to the mess that must be cleaned up after baking.
Silicone Baking Mats

Silicone is used to produce nonstick kitchen utensils, baking sheets and pans, and baking mats. These mats can be used in lieu of paper baking sheets and can be washed and reused. Silicone baking mats come in a variety of colors and sizes and do not retain odors or flavors. They require very little storage space, are stain resistant, dishwasher safe and encourage even heat distribution when baking. Silicone baking mats can go from freezer to oven and can withstand extreme temperature changes.
Cooking Stones

Cooking stones can be used in place of a cookie sheet or baking pan and will disperse heat evenly across the food being baked. Cooking stones are flat rectangular or circular shaped pieces of crockery that work best when they are preheated prior to baking. Stones will change color with use, but discoloration will not affect the flavor of the food or the nonstick properties of the stone.
Foil with Nonstick Spray

Grease a baking pan if you don't have baking paper or any other alternative on hand. You may also place two layers of foil on the pan and spray it with nonstick spray. Doubling the thickness of the foil will efficiently disperse the heat, resulting in a higher quality finished product.
