Read your recipe and determine the kind of sugar you will be using. In addition, determine whether your recipe is written using imperial units (ounces) or metric weights (grams).

Divide the amount of sugar called for in your recipe by the weight equivalent of 1 cup. One cup of brown or white sugar is approximately 7 oz. or 200 g; one cup of icing sugar is approximately 4.5 oz. or 125 g; one cup of superfine sugar is approximately 6.5 oz. or 190 g. Therefore, if your recipe called for 400 g of white sugar, you would divide 400 by 200 and obtain a result of 2 cups.
