What is yoghurt made out of?
Yoghurt is a fermented milk product produced by the bacterial fermentation of milk. The bacteria used to make yogurt are called yogurt cultures. These bacteria convert lactose, the natural sugar found in milk, into lactic acid, which gives yogurt its characteristic tart flavour and thick consistency.
The most common type of yogurt is made from cow's milk, but yogurt can also be made from other types of milk, such as goat's milk, sheep's milk, or buffalo milk.
The process of making yogurt begins by heating the milk to a specific temperature. This temperature is high enough to kill any harmful bacteria that may be present in the milk, but not so high that it denatures the proteins in the milk.
Once the milk has been heated, it is cooled to a temperature that is suitable for the growth of yogurt cultures. The yogurt cultures are then added to the milk and the mixture is allowed to ferment for several hours.
During the fermentation process, the yogurt cultures convert the lactose in the milk into lactic acid. This lactic acid gives yogurt its characteristic tart flavour and thick consistency.
Once the yogurt has fermented, it can be refrigerated and consumed. Yogurt can be eaten on its own or it can be used as an ingredient in a variety of dishes.
