How to Bake With Glass Baking Dishes
Dark metal, light reflective metal, and glass baking pans are the three main categories of baking pans available. The different types transfer oven heat differently so the types require a slightly different approach to prevent burning or under cooking food. Recipe directions and packaged foods are typically based on the use of light reflective metal pans. Dark metal and glass baking dishes absorb more heat so the food inside of them cooks more quickly than it does in light metal pans.

Instructions

Find the recommended baking temperature on the recipe or food package. Subtract 25 degrees from the recommended temperature.

Preheat the oven to the temperature you just calculated.

Place the baking dish filled with food in the oven.

Check the recipe or package to find out how long the food normally has to bake and subtract five minutes. Food continues to bake in glass baking pans for about five minutes after it is removed from the oven. It also browns faster in glass dishes, so if you wait until it looks brown before removing it from the oven it may end up dark brown by the time it actually finishes cooking.
