How do you make calzone dough?

Ingredients:

- 2 1/4 tsp active dry yeast

- 1 1/4 cup water (110-115°F)

- 1 tsp salt

- 1 tbsp brown sugar

- 2 tbsp olive oil

- 3 cups flour

Instructions:

1. Activate the yeast. In the bowl of a stand mixer, combine the yeast and warm water. Let sit for 5 minutes until the yeast is foamy.

2. Add the remaining ingredients. Add the salt, sugar, oil, and 2 cups of flour to the bowl.

3. Mix the dough. Using the dough hook attachment on medium speed, mix the ingredients until they come together to form a dough. The dough should be soft and slightly sticky, but not too wet. If necessary, add more flour 1 tbsp at a time until it reaches the desired consistency.

4. Knead the dough. Knead the dough for about 5 minutes, until it is smooth and elastic.

5. Let the dough rise. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

6. Punch down the dough and use it as desired. Once the dough has risen, punch it down and divide it in half if desired. Roll out each half into a 12-inch circle. Top with your favorite fillings, fold in half, and bake according to your recipe.
