Pancake Breakfast Ideas
Buttermilk pancakes are a standard favorite, but there are many other kinds of pancakes. By varying the pancake recipe or serving them with different toppings, pancakes can be new and different every time they are served.
Buttermilk Pancake Recipe

Make basic buttermilk pancakes by mixing one egg and 3/4 cup buttermilk in a medium bowl. Add 1 cup of flour, 2 tbsp. sugar, 2 tbsp. oil, 1 tbsp. baking powder and 1/4 tsp. salt to the egg and buttermilk. Mix everything until smooth and creamy.
Pancake Additions

Turn basic buttermilk pancakes into fruity delights by adding a spoonful of fresh fruit to each pancake as it sizzles on a hot griddle. Make each pancake and as soon as the underside of the pancake is cooked, sprinkle some blueberries, blackberries, or raspberries onto the surface of the pancake. Flip them and cook on the other side and serve.
You can add a sprinkling of chopped nuts or granola to each pancake instead of the fresh fruit.
Recipe Variations

Make oatmeal cinnamon pancakes by making the basic buttermilk pancake recipe and adding 1/2 tsp. of cinnamon. Also, substitute 1/2 cup of quick cooking oatmeal for 1/2 cup of the flour.
Make cornmeal pancakes by making buttermilk pancakes and substituting 1/2 cup cornmeal for 1/2 cup flour.
Pancake Shapes

Make a variety of pancake shapes by pouring the pancake batter into shapes on the griddle as you make the pancakes. For example, make a teddy bear face by making one large circle and two smaller circles near the top for the ears. Place fresh fruit onto the face of the teddy bear.
Place the pancake batter into a plastic squeeze bottle to help create a variety of different shapes on the griddle. Make pancakes in letters to spell a child's name. Make heart-shaped pancakes. Place metal cookie cutters on a griddle and pour the pancake batter into the cookie cutters.
Pancake Toppings

Maple syrup is a favorite pancake topping. Vary the toppings offered with pancakes for a change of pace. Offer fruit sauces made from blueberries, strawberries, blackberries, peaches or cherries. Add whipped cream to the top of the fruit sauce for an even tastier treat.
Serve whipped honey butter either alone or along with maple syrup. Some people enjoy spreading peanut butter or other nut butters on pancakes instead of plain butter.
