Is the protein in egg yolk or white?
The protein in an egg is found in both the yolk and the white, but in different amounts and types.
* Egg white is primarily made up of albumin, a protein that coagulates when heated. It contains about 10% protein.
* Egg yolk contains a more diverse mix of proteins, including vitellogenin (which is broken down into other proteins during development), lipoproteins, and phosphoproteins. The yolk contains about 16% protein.
So, while the yolk has a higher protein content overall, the white is mostly pure protein, while the yolk has other components like fat and cholesterol mixed in.
