How to Make Fluffy Bread (6 Steps)
The secret to making a fluffy bread is increasing the gluten. Ever wondered why whole wheat bread tends to be a bit dense and heavy? It is the lack, or rather the break down of gluten due to the bran. White bread is fluffier as it does not contain the bran, which acts as a gluten slayer. White bread is naturally fluffy, however, if you wish to enhance the fluffiness of your favorite bread recipe, consider using a gluten enhancer to increase elasticity and rise.
Things You'll Need
- 1 cup warm milk
- 2 tsp. yeast
- 4 cups flour
- 2 tsp. salt
- 1 tbsp. sugar
- 1 tbsp. margarine or butter
- 1 tbsp. gluten enhancer

Make your bread dough. You can use any recipe you like, whether it is whole wheat, white sandwich, buttermilk, sour dough, etc. For fluffy white bread, begin by combining 1 cup warm milk with 2 tsp. of active dry yeast in the bowl of your stand mixer, or in your bread machine. Allow the yeast to dissolve completely before continuing with the remaining ingredients. Add 4 cups of flour, 2 tsp. salt, 1 tbsp. sugar and 1 tbsp. butter to the yeast milk.

Add a gluten enhancer. This will boost the fluffiness of your bread, though is not necessary for the recipe to come out properly. There are many gluten-enhancing products available on the market, including vital wheat gluten, gluten flour and vitamin C crystals. You can find these products in the baking or organic foods section of your grocery market. Only add 1 tbsp. of enhancer to the recipe before mixing the dough.

Mix the dough (ingredients and enhancer) on medium speed for four minutes with a dough hook if using a mixer, or set the program for 2-lb. loaf on your bread machine.

Remove the bread from either the mixer or bread machine and form into a slight ball. Cover and let rise in an oiled bowl for one to 1 ½ hours. Keep the covered bowl in a warm location.

Place the dough inside of a greased loaf pan and cover with a tea towel. Allow to rise for another hour, or until it rises enough to nearly reach the top of the pan.

Bake the loaf for 35 to 45 minutes at 375 degrees F. You should allow the oven to heat for at least 30 minutes prior to baking. The bread is done when the crust looks golden brown and is slightly hollow when tapped. Allow to cool in the pan, then invert and cool on a cooling rack. The crust on the top may appear a bit crisp, however, the bread on the inside will be light and fluffy.
